Author Suzanne Nelson’s Cookie Monster Cookie Recipe

Are you ready for the cookie to beat all cookies? Behold, the Cookie Monster Cookie!

This cookie is a veritable heaven for all those who love sweet and salty combined. It’s from my latest Scholastic foodie book, A Batch Made in Heaven.

It’s an everything-but-the-kitchen-sink kind of cookie, complete with chips, chocolate morsels, crunchy cereal and more.

I dare you to bake it. When you do, you won’t be able to resist going back for a second, third, fourth…oh, who’s counting anyway? Just enjoy. Every. Single. Bite.

 

Cookie Monster Cookies

Ingredients:

2 eggs

1 Tsp vanilla extract

3/4 light brown sugar

1/2 cup white granulated sugar

2 sticks unsalted butter, softened

2 1/2 cups flour

1 Tsp baking soda

1 Tsp baking powder

1/2 Tsp salt

1/3 cup chopped cornflakes

1/3 cup crushed potato chips

1/3 cup chopped small pretzel sticks

1/3 cup white chocolate morsels (like Ghirardelli)

1/3 cup semi-sweet chocolate morsels (like Nestle Toll House)

1/3 toffee bits (like Heath baking toffee bits)

 

Directions:

Preheat your oven to 375° Fahrenheit. Line a nonstick baking sheet with parchment paper. In a medium mixing bowl, combine eggs, vanilla, brown sugar, and granulated sugar. Using a handheld or electric stand mixer, beat the eggs-and-sugar mixture for approximately 1 minute. Then mix in softened butter, beating until creamy.

In a separate bowl, combine flour, baking soda, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients, mixing as you go.

Once your dough is well-blended, stir in your cornflakes, potato chips, pretzels, white and dark chocolate morsels, and toffee bits.

To make extra-large cookies like the kind baked at A Batch Made in Heaven, place large, heaping spoonfuls of dough on your baking sheet. You may only be able to fit 6 to 8 cookie dough balls on a baking sheet at a time.

Bake the cookies for 12 to 15 minutes, until golden brown around the edges.

Allow the cookies to cool for about 5 to 10 minutes before serving.

This recipe makes 10 to 12 cookies, depending on how large you make them.
